モンテフォルテ ダルポーネ地区の複数の自家畑からのワインで、樽発酵、樽熟成させています。土壌は火山性で、石灰岩と粘土に富んでいます。最良の葡萄を得るために、収穫期の最後に過熟状態になったところで、摘み取ります。酵母はガルガネガに最適な特別なものを用います。60％を20hLの大樽で、40％をバリック（2回使用樽）で発酵、6～8ヶ月澱と共に熟成させます。マロラクティック発酵をしているので酸が穏やかで、ろ過せず瓶詰めすることで豊かさと力強さが増しています。すばらしいアロマと味わいが特徴です。その輝く色合いはイマジネーションを引き出し、クリーンでほのかに青草の香りがあり、生き生きとした深みのあるノーズがバリックで熟成させたことを感じさせます。アーモンドやフローラルを思わせる風味が、豊かで深い果実味により保たれています。「10年は熟成できるポテンシャルがある」とミケーレは話していました。

サン テステフで最も古いシャトーのひとつです。その名前は初代のオーナー、フランソワ トロンコワに由来します。歴史は18世紀に遡り、何人かの生産者の手を経た後、2006年にシャトー モンローズの生産者でもあるマルタン＆オリヴィエ ブイグ兄弟がオーナーになり、大規模な近代化が進められました。長年ムートン ロートシルトに勤め、現在はモンローズと共にトロンコワ ラランドの支配人をしているエルヴェ ベルランの指導の下、ワイン造りが行われます。発酵と醸しは短めに行います。フレンチオークの樽で12ヶ月熟成させます。輝きのある濃いガーネット色。非常に豊かなアロマがあります。フレッシュな果実の香りにスパイスの要素、そしてかすかに樽のニュアンスが感じられます。非常にバランスのとれた味わいで、よくこなれたタンニンが心地よく感じられます。やわらかくシルキーな余韻があります。

大部分が買い葡萄で、ネイヴェ村、トレイゾ村の葡萄を使用します。畑は7ha、標高は270～300m、南から南西向きです。石灰岩、粘土、マールを含む土壌です。栽植密度5 ，000本/ha、仕立てはギヨーです。9月末～10月初旬に収穫します。発酵と醸しは10日間行います。最初に2ヶ月ステンレスタンクで、その後14～15ヶ月樽で熟成させます。さらに6ヶ月ステンレスタンクで落ち着かせ、数年間瓶熟させます。はっきりと分かるバラの花やスミレのアロマが特徴です。熟したプラムやリコリスのアロマに、スパイスやチョコレートのニュアンスが感じられます。柔らかなタンニンは甘さを感じさせ、ベルベットのようにしなやかな余韻があります。

ショイレーベは晩熟で、葡萄が健全な状態を保ちやすく、しっかりとした完熟したいい状態で収穫が出来ます。色はまさに黄金色。蜂蜜やアプリコット、白桃、メロン、マンゴーなど、極めて甘い香りと味わいが続きます。やわらかい酸と充分な甘みが、アイスヴァインの醍醐味を楽しませてくれます。
⑦Weinheimer Kirchenstuck Huxelrebe TrockenbeerenAuslese 2019 Rheinhessen

フクセルレーベは、品質、収量とも安定せず、何もしないとたくさんの房を付けるため、春の剪定で収量をしっかりと制限する必要があります。スレートと粘土、石の多い砂質粘土、粘土石灰質が混ざる土壌です。収穫は10月の末に行います。貴腐菌が付き、干し葡萄状にしぼんだ状態の葡萄を丁寧に選別しながら手摘みで収穫します。収穫した葡萄をセラーに運び、プレスし、温度管理したステンレスタンクで約3～4週間発酵させ、そのまま同じタンクで熟成させます。
